Fear of French Cooking

Cooking classes on Martha's vineyardFrench chef Michael Brisson hosts cooking classes this winter at Edgartown’s fabled l’etoile restaurant. During each two hour hands-on class, students will help create a classic French meal while learning traditional techniques and some tricks of the trade.

A laid-back atmosphere prevailed at this class where nine students tackled a challenging French standard – duck. After breaking the ice over French wine and cheese, a mixed group - men, women and couples got down to business. Chef Brisson’s approach was easygoing as he led the class through the steps, from butchering the bird to the final garnish. Along the way he shared his secrets and involved students in every phase of the preparation.

The general consensus was that, while the results are far from overrated, mastering French cooking is not as daunting as one might think. As the class sat down to enjoy the duck, all participants felt confident about his/her ability to replicate the meal prepared. And, of course, since the atmosphere was French, a good time was had by all.
